Chicken pie







Ingredients of pie shell: 
  • 160g all-purpose flour
  • Salt
  • 90g butter, diced
  • 3 tbsp water
Ingredients of fillings:
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 6 button mushrooms
  • 3 carrots
  • 1 leek
  • 3 cooked chicken breast, diced
  • 3 tsp flour
  • 160 ml chicken stock
  • 85 ml whipping cream
  • Parsley

To make pastry:



Sift flour and salt into a large mixing bowl. Add diced butter and stir. Rub the butter into the flour with your finger tips, lifting the flour from the bottom up on top, until the mixture looks like coarse breadcrumbs.

Add 2 tablespoons of the water to flour mixture. Add the rest of the water bit by bit until the mixture comes together into a ball. The dough should leave bowl clean.
Turn the dough onto a lightly floured surface and lightly knead by hand until smooth. Don’t over knead the dough. Divide into two balls, one larger in size for making the base, with another one smaller for making the top. Roll into two disc shapes. Wrap in plastic wrap and chill in fridge for about 25 to 30 minutes.
To make fillings: 
Heat oil over medium-high heat. Saute onion and the leek until softened. Add garlic and cook until aromatic. Add mushroom, carrots and chicken. Sprinkle parsley and combine well. Cook until the vegetables turn soft.
In the meantime, mix 2 tablespoons of chicken stock with 3 teaspoons of flour. Set aside.
Pour the rest of chicken stock into the vegetables and chicken mixture. Bring it to a boil. Continue to cook for 2 to 3 minutes. Stir in the flour mixture and cook to your preferred consistency. Add whipping cream. Season with salt and pepper. Turn off the heat. Transfer the fillings into a large bowl and let it cool for a while.
To assemble and bake the pie:
Preheat oven to 200C.
Remove the larger dough disc from fridge. Place on a lightly floured surface. Use a rolling pin to roll out into a circle slightly larger than the mould. Carefully line the mould. Trim the edge. Save the trimmed dough for decoration. Prick the base with a fork. Line with baking paper and place ceramic beads, or beans, or rice on top. Transfer to the preheated oven for blind-baking, about 15 to 20 minutes, until the edge becomes lightly brown.
Remove the pie shell from oven. Put away the beads. Roll out the smaller dough disc into a circle similar to the size of the mould. Spoon the fillings into the shell and cover with the dough disc. Crimp the edges to seal and score the top pastry. Cut two slits in the middle of the pie. Use the trimmed dough for decoration. Egg wash the pie.
Bake in the preheated oven, for about 20 to 25 minutes, until golden. Serve hot.




Ingrédients de la pâte à tarte:

  • 160g de farine
  • sel
  • 90g de beurre, coupé en dés
  • 3 cuillères à soupe d'eau glacée
Ingrédients de garniture:
  • 1 oignon, coupé en dés
  • 2 gousses d'ail, écrasées
  • 6 champignons de Paris
  • 3 carottes
  • 1 poireau
  • 3 escalopes de poulet cuites, en dés
  • 3 càc de farine
  • 160 ml de bouillon de poulet
  • 85 ml de crème à fouetter
  • Persil

Tamiser la farine et le sel dans un grand bol. Ajouter le beurre coupé en dés et mélanger. Frotter le beurre dans la farine du bout des doigts, jusqu'à ce que le mélange ressemble à la chapelure.



Ajouter 2 cuillères à soupe d'eau glacée au mélange de farine. Ajouter le reste de l'eau glacée peu à peu jusqu'à ce que le mélange se rassemble en boule.

Mettez la pâte sur une surface légèrement farinée et pétrir légèrement à la main jusqu'à obtenir une consistance lisse. Ne pas trop pétrir la pâte. Diviser en deux boules, une plus grande pour la fabrication de la base, et une autre plus petite pour la fabrication de la partie supérieure. Envelopper dans un film plastique et mettre au frigo pendant 25 à 30 minutes.
Pour faire la garniture:
Faire chauffer l'huile à feu moyen. Faire revenir l'oignon et le poireau jusqu'à ce qu'ils ramollissent. Ajouter l'ail et cuire quelques minutes. Ajouter les champignons, les carottes et le poulet. Saupoudrer de persil et bien mélanger. Cuire jusqu'à ce que les légumes soient tendres.
Entre-temps, mélanger 2 cuillères à soupe de bouillon de poulet avec 3 cuillères à café de farine. Mettre de côté.
Verser le reste de bouillon de poulet dans le mélange de poulet aux légumes. Amener à ébullition. Continuer la cuisson pendant 2 à 3 minutes. Incorporer le mélange de farine et faire cuire. Ajouter la crème à fouetter. Assaisonner avec le sel et le poivre. Transférez la garnitures dans un grand bol et laisser refroidir pendant quelques minutes.
Pour assembler et cuire la tarte:
Préchauffer le four à 200C.
Retirer la plus grande boule de pâte du frigo. Placer sur une surface légèrement farinée. Utiliser un rouleau pour créer un cercle légèrement plus grand que le moule. Placer soigneusement le moule. Couper le bord. Piquer le fond avec une fourchette. Mettre au four pendant environ 15 à 20 minutes, jusqu'à ce que le bord devienne légèrement brun.
Retirer le fond de tarte du four. Etaler la 2ème boule de pâte pour former un cercle proche de la taille du moule. Pincer les bords pour sceller les 2 pâtes. Coupez deux fentes dans le milieu de la tarte. Utilisez la pâte en trop pour la décoration. Etaler un jaune d'œuf sur la pate.
Mettre au four pendant environ 20 à 25 minutes. Servir chaud.

  1. Coucou, juste une précision.. tu fais cuire le fond de tarte tout seul pendant 15 mn environ et ensuite tu met la garniture, tu scelles avec le 2eme paton et tu fait cuire encore 25 mn?? Merci.
